5-Minute Breakfast Ideas

Having a morning rush and no time to prepare a healthy breakfast? We’ve got you covered. Here are some easy, quick breakfast ideas, so you can start off everyday in a peaceful way. Upgrade your a.m. with these 5-minute recipes that will make you want to become a morning person.

French toast in a mug

Ingredients:

  • 2 slices of bread, cut into cubes
  • 1 tbls butter
  • 1tbs maple syrup
  • A dash of cinnamon
  • 3 tbls whole milk
  • 1 drop of vanilla extract
  • 1 large egg, beaten
  • 1 cup bread pieces
  • Sliced bananas – optional
  • Peanut butter – optional
  • Chocolate chips – optional

Preparation:

Place the butter in a large microwave-safe mug and microwave for around 20 seconds or until it is melted. Swoosh it around the cup. Add the egg, cinnamon, vanilla extract, whole milk, and butter to the mug and whisk until everything is mixed. Press the bread cubes into the mixture. Let the bread sit and allow the liquid to soak in the bread for around 1 minute. Microwave on high temperature until set, for around 90 seconds or until the mixture is cooked to your liking. Drizzle maple syrup and add your choice of toppings.

Avocado toast and eggs

Ingredients:

  • 1 avocado peeled and pitted
  • 2 tbls chopped cilantro
  • ½ lime juice
  • 2 tbls extra-virgin olive oil
  • Salt and pepper
  • 2 slices bread
  • 2 eggs (scrambled, poached, fried, optional)

Preparation:

Toast the 2 slices of bread until golden and crisp. In a small and shallow bowl mash the avocado with a fork. Mix the mashed avocado with lime, cilantro and virgin oil. Season with salt and paper to taste. Top: Spread each half of the bread with the avocado mixture and drizzle with olive oil. Top with the egg of your liking.

Scrambled eggs with spinach

Ingredients:

  • 2 large eggs
  • 1 tbls olive oil
  • 2  cups fresh baby spinach  
  • 2 tbls grated Parmesan cheese
  • ¼ teaspoon red pepper flakes
  • Salt and black pepper

Preparation:

Whisk eggs in a small bowl and season with salt and pepper, to taste. Heat oil in a medium nonstick skillet over medium to high heat for around 2 minutes. While it is heating, whisk together the eggs and Parmesan in a large bowl, adding salt and pepper to taste. Set aside. Add the spinach into the skillet and cook, tossing, just until beginning to wilt, for around 1 minute. Pour the egg mixture into the skillet and cook, stirring occasionally, just until set to your liking. Sprinkle with crushed red pepper flakes and serve right after you are done.

Banana split

Ingredients:

  • 2 ripe bananas
  • ¼ cup nut butter (it could be almond or cashew butter)
  • 4 scoops natural frozen yogurt (or coconut yogurt)
  • Berries (strawberries, blueberries or raspberries, to taste)
  • 4 tbls granola

Preparation:

Peel the bananas and carefully split them down the center, without completely slicing through, until cut in half width-ways. Place in 2 bowls, cut-sides facing upwards. Top the banana halves with nut butter of choice, add the frozen yogurt on it, place the berries and scatter over the granola.
